A pale blue snowflake, sculpted in crystalline facets. Inside, a light vanilla rum mousse wraps a chestnut crémeux made with Yamae chestnuts from Kumamoto, over a ribbon of salted caramel, a chocolate almond sponge and a caramelised hazelnut feuilletine crunch.
